An Exclusive Gem: Parador ‘Riserva’

Today we share an exclusive wine that you will only find in select restaurants (Ex. The ‘3 Star Michelin rated’ French Laundry). Influenced by Pesquera and Vega Sicilia’s Unico, the great Tempranillos of Spain and blends of Europe, Parador was founded by Steve Ventrello in 1998, and is focused on Tempranillo (sourced directly from the Ribera del Duero and Rioja), Cabernet Sauvignon and blends of both. Parador wines have evolved from the early blends which included Sangiovese, striving for the balanced flavors of the old world utilizing world-class fruit grown in the Napa Valley.

2006 Parador ‘Reserva’ Red Wine, Napa Valley

Wine Spectrum Rated 95: Reserva cuvèes are barrel-selected and aged at least an additional year in barrel. The total barrel aging is minimum 3 years prior to bottling. It is then aged in bottle, totaling a minimum of 8 years of aging from the time of harvest. This Reserva displays beautiful floral aromas of rose petals and candied fruit on the nose, while the palate shows lean red fruits, earth and a touch of aged leathery spice, white pepper and citrus orange peel.
Parador wines are made with extreme attention to detail, and given long-term barrel aging, resulting in a truly unique finished product. In today’s world of “rush to market” releases, they place the highest priority on selling their wine only when it’s ready. A blend of 45% Tempranillo and 55% Cabernet Sauvignon. Only 123 Cases were produced.

2008 Parador Meritage, Napa Valley – $42/bottle
Wine Spectrum Rated 94+:
Still unique in Napa, after 10 years, the PARADOR Napa Valley Red Wine is inspired by the great blended wines made at Vega Sicilia in the Ribera del Duero. Utilizing great Cabernet Sauvignon grapes from the dramatic Hossfeld Vineyard located in Soda Canyon, and blending with the Tempranillo from Rancho Chimiles Vineyard to make a sumptuous, velvety wine with great aging potential. After blending in the spring following harvest, the wine is aged 2 ½ years in a combination of 30% new and the balance, used French oak barriques and puncheon barrels. The wine is deep-colored, with juicy, bright red fruits such as cherry and red plums, with hints of Asian spice and cinnamon. 52% Tempranillo, 48% Cabernet Sauvignon. 176 cases produced.

2008 Parador Cabernet Sauvignon, Napa Valley – $45/bottle
Wine Spectrum Rated 93+:
Located in the southeast section of Napa, Coombsville is an area increasingly known for cooler, blue-fruit character. The 2008 vintage is a saturated ruby color. Pungent dark berries and cherry on the nose and palate, with spice and floral nuances gaining power with air. Plush and seamless on entry, then firmer in the middle, with notes of black pepper and Indian spices carrying through a sweet, focused finish. This youthful wine benefits a lot from aeration. 100% Cabernet Sauvignon. Less than 100 cases produced.

2006 Parador Cabernet Sauvignon ‘ Hossfeld Vineyard’, Napa Valley – $65/bottle

    This is a full bodied wine that can hold it’s own and is best paired with rich dishes. Duck in black cherry sauce springs to mind. Delicious!
