We can’t help but think of lemon bars from The Joy of Cooking when tasting this wine. A racy, fresh entry gives the wine precision and focus. Beautiful minerality lends a balanced texture to the winewhile citrus zest and the suggestion of clean wet stone make the wine glide over your palate. Like the previous vintages, this wine is both present and eager to please.
A native of the Jura region, Trousseau Gris is a true “Grey” grape and can make either white wines or slightly colored wines. We choose to press the grapes the moment they arrive at the winery, opting for a fresh white wine style. Pressed lightly to avoid any bitterness, the juice is transferred to stainless steel barrels and neutral french oak barrels. The wines ferment at low temperatures and can take as long as 6 weeks to finish. We age the wine on its lees, assemble the blend in February and bottle soon thereafter. The wine does not go through malo-lactic fermentation. 438 cases produced.
