When making our estate red wines, one of the first steps we take is to remove a small portion of the juice so the remaining juice will have a higher skin to juice ratio. This process called Saignée (“to bleed”) leaves us with a small amount of the lightly colored, yummy precursor to Rosé. After fermentation and spending a much smaller amount in time in Barrel than its brethren, we end up with a fantastic wine.
Refreshing with a nice depth of flavor for a Rosé, our 2018 will definitely be a warm weather favorite. That said, we find it has great food pairing acumen for almost any occasion. 110 cases
