Aromas of garrigue (wild thyme, lavender and rosemary). Flavors of raspberry and black cherry. PAIRING SUGGESTIONS: Grilled steak, game meat (duck especially), lamb.
85% older-vine Grenache, 10% Syrah, 4% Carignan, 3% Mourvèdre, 3% Counoise. Hand-harvested. Fermented on indigenous yeasts in tank; aged for 16 months in upright wooden tanks and older foudre. Unfined and unfiltered.
