Aromas of violets, crushed stones, black raspberries. Mineral, suave; flavors of red berries, ripe red plums. PAIRING SUGGESTIONS: Grilled pork sausages; hard French cheeses
‘Croix Viollette’ faces southeast and is surrounded by a stone wall, neighboring an active cloister (the Violet Cross) in the village of Brochon, next to Gevrey-Chambertin. Soils mix clay and limestone with gravel. Fermented on indigenous yeasts in temperature-controlled tanks. Aged in older French oak barrels. Unfined and unfiltered.
