Soils are loamy and clay- rich, with tons of ancient seashells; this special terroir is called “marne de crétacée” (Cretaceous marl). Vine age 30 years, on average. Hand-harvested. Fermented on indigenous yeasts in large, upright wooden tanks (25-36HL). Racked, then aged for one year in same tank. Unfiltered. A “pavé” is a paving stone; when plowed, the earth breaks up into chunks the size of paving stones, given the density of clay here.
