Aromas of limes and lemons, crushed oyster shells, dash of white pepper. Refined, clean, vibrant. Fermented on selected yeasts in temperature-controlled, stainless steel tanks. Aged in tank, with regular lees stirring, for five months. Vineyards in Vinon, southeast of Sancerre, are located on the region’s rolling hills, alternating with forest and cereal production. Soils are mostly a combination of clay and limestone, with flint. AGE OF VINES: 30 years, on average. 100% Sauvignon Blanc.
