Fermented on indigenous yeasts in large, upright wooden fermentation tanks (from 25-36HL). Racked, then aged for one year in same wooden tank. Unfiltered.
100% Sauvignon Blanc. ‘Paradis’ faces full south, on a steep hillside. Top soils are stony; subsoils are pure chalk “motherrock.” The family has trained vines’ roots to reach deep into the subsoil. Vine age 20-60 years. Hand-harvested. Fermented onindigenous yeasts in upright wooden tanks (25-36HL). Aged for one year in wooden tank. Unfiltered.
