VIN95 The 2019 Cabernet Sauvignon Pauli Vineyard is packed with inky dark fruit, blackberry jam, chocolate, licorice, dried herbs, smoke and menthol. Fruit density and tannic heft are all amplified in this dramatic, full-throttle Cabernet from Tobias. I very much like the energy here, and that is needed, as the 2019 is pushed right to the limit of too much of everything.
Estate Notes: A dark ruby to deep garnet color in the glass, the 2019 is opulent and rich. There is a balance to the rich fruit from the purity of expression as the vineyard site shines through in the first sip. Vibrant black cherries, violets, and blackberry are layered with licorice, dried herbs, and a tension from the minerality only found from Howell Mountain sites. Earthy aromas, floral notes, mocha, and spice wrap the fruit and site into a beautiful finish. Rich, smooth tannins elongate each flavor with a long finish. We pushed the boundaries this year, striving for a harmonious balance between ripeness and elegance, richness, and finesse. 100% Cabernet Sauvignon, 9 clones. Aged 24 months French oak, 50% new French Oak. 400 cases produced.
