JD96 Looking at their NV Perpetual Reserve N.V. 01, it’s based on 50% Chardonnay, 42% Pinot Noir, and the rest Pinot Meunier that’s based largely on the 2020 vintage (50%) yet includes a smattering of other vintages, all brought up 50% in barrel. It was aged 3 years in bottle and saw 4 grams of dosage. It has a gorgeous nose of toasted bread, white flowers, toasted notes, and more stone fruits. This carries to a medium-bodied wine that has a layered, elegant mouthfeel, fine bubbles, plenty of mid-palate depth, and a great finish. Compared to the other releases in the lineup, it’s a more medium-bodied, chiseled, focused, mineral-driven cuvée. I’d give bottles a year or two, then enjoy over the following decade. This is legit.
WA94 A multi-vintage cuvée based on the 2020 vintage (approximately 50% of the blend), with reserve wines from 2018 and 2019, Westborn’s NV Perpetual Reserve NV.01—a blend of 50% Chardonnay, 42% Pinot Noir and 8% Pinot Meunier—spent 37 months en tirage. There’s a rich, slightly oxidative nose, marked by scents of toast, struck match, button mushroom and cave-aged Gruyère. It’s complex, savory and nearly dry, with a dosage of just four grams per liter. Medium-bodied, with a fine bead and a long finish, this (and its sibling vintage-dated wines) are welcome additions to the California sparkling wine scene.
