Very dark, not quite opaque. Earthy leathery and deep dark cherry aromas are medium intense. Hints of vanilla cream and black raspberry. Ever so slight green herbs show this to be a correct varietal expression of Cabernet Sauvignon.
Full plush entry not tannic… echoes, the black raspberry, and bing cherry flavors easy on the tongue with a medium weight and early drinking impression. The finish is not tannic but shows enough acidity and youthfulness to provide several years of ideal prime Cabernet drinking. Another great expression of the local Santa Cruz Mountain region.
World class mountain terroir combined with micro-managed vineyard care leads to the highest quality Cabernet Sauvignon raw materials. This wine was vinified using the same small scale techniques we employ for our other great Cabs. Fermented in open top vats with hand punch downs, then aged in a com bination of American and French oak barrels.
