Oysters Rockefeller

with

2005 Jean Veselle Champagne Brut Prestige

OystersJ290Wine Spectrum 94: This family estate is more than 300 years old and has continued the local traditions of producing rich, layered and captivating Champagne based on Pinot Noir grapes. While these wines are structured (similar to dry red wine), they show a silky lightness on the tongue that makes them instantly captivating. Winemaker Delphine Vesselle, daughter of Jean, represents the next artisan generation in Champagne—trained abroad, she artfully has blended the region’s traditions with modern winemaking sensibilities. The Brut Prestige is a 70% Pinot Noir and 30% Chardonnay blend. Honeysuckle blossoms tickle the aromatic nose. Toasty, lovely notes of warm, crusty oatmeal biscuits drizzled with molasses and sweet, red fruits.

with

NV Michel Turgy Champagne

asparagusT086Wine Spectrum 94+: From the same area of Champagne that boasts Salon, Krug and Launois….This Grand Cru bubbly is comprised of toasted brioche with creamy butter, crunchy toffee and bunches of wild blossoms—this persistent 100% Chardonnay pulsates with great energy and freshness. Grace, depth and beauty that are both a nod to its noble Le Mesnil terroir and the artisanal talents of winemaker Michel Turgy.

Decadent Flourless Chocolate Cake and Raspberry Coulis

with

NV Egly Ouriet Brut Tradition Grand Cru Champagne

cakeE869Wine Spectrum 95, Anotnio Galloni 95: The Non-Vintage Brut Vieilles Vignes is a profound bottle of Champagne. A blend of two-thirds Pinot Noir and one-third Chardonnay produced a rich, full-bodied Champagne with a wheat thin and honey-scented nose, and forceful, rich, boldly stated flavors that offer elegance as well as authority. The finish is dry and long. Still extremely young, this Champagne is capable of further development. The price makes it a steal.
