In 1979, a 25-year-old agronomist named Renzo Cotarella arrived at the Umbrian estate Castello della Sala with a radical goal: to craft an Italian white wine that could age like the great reds. It was an obsession that would define his career and revolutionize Italian winemaking.
 
He experimented relentlessly, combining the nobility of Chardonnay with the local character of Grechetto, chasing a wine with both precision and soul. The early years were humbling. But in 1985, he finally bottled something worthy: the first Cervaro della Sala.
 
It was one of the first Italian whites to undergo malolactic fermentation and barrique aging. It proved that elegance, structure, and longevity weren’t the exclusive domain of reds.
 
Today, Cervaro is a benchmark: a white wine that continues to evolve gracefully over decades. The 2023 release carries that same quiet ambition.

Cervaro della Sala 2023 is light straw yellow with greenish hues. The nose offers notes of acacia blossoms, bergamot oranges, citron and ginger together with delicate hints of buttered bread and flint. The palate is refined, elegant and energetic: its savory character is sustained by outstanding freshness. The finish is harmonious, delicate and defined by notes of tropical fruit, roasted hazelnuts and hints of spices. An exceptional vintage, vertical and refined.

This icon of Italian winemaking presents itself in the glass with a captivating straw-yellow color, interspersed with golden reflections. Its aroma is seductive and complex, with ripe exotic fruit aromas such as pineapple and mango, accompanied by subtle notes of vanilla and roasted nuts. This noble wine is the result of a careful assemblage of Chardonnay and Grechetto grapes, which grow on the calcareous soils of the Umbrian hills.
